Power Oatmeal

Rolled oats with almond milk and egg whites.

Servings: 2 servings
Ingredients
  • 1 cup old fashioned rolled oats or rolled spelt
  • 1 cup purified water
  • 1 cup almond milk, unsweetened
  • 2-3 egg whites, organic
  • 1/2 teaspoon cinnamon
  • 2 dashes nutmeg
  • 1/8 teaspoon sea salt
  • 4 tablespoons Xylitol or molasses
  • 1/4 cup almond slivers (optional)
Directions
Place water and almond milk in a pot on the stovetop. Bring to a boil then add the rolled spelt grain, sea salt, nutmeg, cinnamon and xylitol.  Turn down to medium low and cook for 15 minutes or until the oats have soaked up the liquid.  At about 12 minutes into cooking stir in the egg whites, keep stirring for 1 minute.  Add stevia or Xylitol to sweeten then top with almond slivers after cooking. Note: You can triple the batch and have for next few mornings. Substitute almond slivers with sunflower seeds. Enjoy hot or cold, served with almond milk
