Mango Kale Salad

The best Raw Kale Salad you'll ever have! Special Note: Make sure to mash down the Kale long enough so it looks as though it has been thoroughly steamed. Ingredients
  • 1 head of Kale, finely chopped
  • juice from 1 lemon or grapefruit
  • 1/8 teaspoon sea salt
  • 1/2 avocado, cubed
  • 1 mango, cut into 1 inch cubes
  • 7 figs, finely chopped
  • 1/4 teaspoon stevia powder (Sweet Leaf) or honey to taste
  • 3 dashes cayenne pepper or to taste
  • 1/2 cup black olives, chopped
Directions
Wash and remove the stems from the kale, then roll the kale into layers so you can finely chop it. Place the kale in a medium size mixing bowl, add the juice of the lemon or grapefruit and mash down with your hands for 3 minutes; squeezing the kale with plenty of healing and loving thoughts. You will know that the kale is done when it looks like it has been steamed and there is a greenish color of juice at the bottom of the bowl. Chop up the mango, avocado and olives, mix into the bowl.  Then add the stevia, sea salt and cayenne to the salad. After all these are placed into the bowl, stir until everything is mixed together.  Feel free to enjoy with Raw Flax Crackers.
