Ingredients

  • 7 Eggplant
  • 3 tablespoons Extra Virgin Olive Oil
  • 1/2 cup Raw Seeds
  • 1/3 cup Basil
  • 2 tablespoons Mint
  • 3 tablespoons Balsamic Vinegar
  • 1/2 teaspoon Kosher Sea Salt
  • 1/2 teaspoon Black Pepper
  • 4 ounces Soft Goat Cheese

Directions

Drizzle olive oil over eggplant and grill or saute, approximately 3-4 minutes per side or until tender. Add to dish and sprinkle above ingredients over the eggplant. Enjoy!
