Ingredients

  • 3/4 cup ground spelt flour
  • 1/4 teaspoon baking soda
  • 1-1/2 cup purified water
  • 1/2 cup ground spelt flakes
  • 1 teaspoon baking powder (aluminum free)
  • 1/2 teaspoon sea salt (Redmond RealSalt)
  • 1 tablespoon xylitol (Emerald Forest)
  • 3 tablespoons walnut or grape seed oil
  • 2 tablespoons purified water
  • 1 teaspoon baking powder

Directions

1. Combine 3/4 cup Spelt flour, baking soda and 1-1/2 cups water; let stand for 5minutes. Mixture will rise. 2. Separately combine 1/2 cup ground spelt flakes, baking powder, salt, and xylitol. 3. Separately combine oil, water and baking powder. Mix ingredients in Steps 2 and 3 together first. Then add the ingredients in Step 1 and mix. Drop 1/4 cup of this batter for each pancake onto a hot greased griddle. Bake to a golden brown on each side. Yields 8-10 pancakes.
